Spinach-Artichoke-Caramelized-Onion Dip

Ingredients

  • 1 large white onion (approx. 15 oz), sliced and slices halved, caramelized, and mostly cooled
  • 6.5 oz jar of artichokes, drained and chopped
  • 12 oz bag of frozen spinach, thawed and squeezed
  • 3 teaspoons Italian seasoning
  • 2 teaspoons garlic salt
  • 1.5 teaspoon black pepper
  • 1 tablespoon minced garlic
  • 2 tablespoons nutritional yeast
  • 7 oz cream of coconut
  • 6 oz mayo

Directions

  • Preheat the oven to 400ºF.
  • Combine all the ingredients and mix until well combined.
  • Spread into a greased pie plate (a 8×8 inch square pan or casserole dish would also work). 
  • Bake for about half an hour until until bubbly and golden
  • Serve with pita chips or Wheat Thins!

Summer Party Dip

Ingredients

  • 8 oz sour cream
  • 8 oz whipped cream cheese
  • 2 red bell peppers, diced small
  • 1 12-oz bag frozen corn, thawed
  • 1 bunch green onions, sliced small
  • 1 poblano pepper, diced small
  • 3 oz bag real bacon bits
  • 1 ranch seasoning packet OR DIY:
    • 3 tablespoons dried parsley
    • 1 tablespoon dill
    • 1 tablespoon garlic powder
    • 1 tablespoon onion powder
    • 1 teaspoon ground black pepper

Directions

  1. OPTIONAL: sauté corn and peppers on medium high heat, stirring occasionally, for about 15 minutes. Let cool. (This is mostly to remove some water from the veggies)
  2. Combine all ingredients! Ideally up to 24 hours ahead of time so the flavors can gel.
  3. Enjoy!
